VISHNEWKA (CHERRY LIQUER)

 

Vishnevka is an old-fashioned drink popular in Eastern Europe. It takes me right back to when I was a child and those fancy Christmas cherry liqueur chocolates would come out…
This is basic and easy to make recipe. You can use vodka or brandy. Be patient- it takes about 45 days to make, but you won’t regret it!
Rich, fragrant, smooth, sweet, irresistible…

 

YOU WILL NEED:
• Sour pitted dry cherries- 600 g
• Orange peel- 5 g
• Cinnamon stick- ½ (regular size)
• Almonds (raw)- 20 g
• Clove- 2 pieces
• Brandy or Vodka- 1 liter (I prefer Brandy- it makes Vishnevka rich and smooth)

Combine all ingredients in large jar, cover with tight lid and let it sit in cool dry place 40-45 days. Shake every 3-4 days. Do not open jar- you can introduce mold inside the product.
When done- drain through strainer, add sugar to taste and enjoy!
You can eat cherries but beware- you will get drunk quick

LOQUAT LIQUOR

 

Tangy yet sweet, wonderfully delicious loquat fruit is rich in vitamins, minerals, and anti-oxidants. This tree originated in the wild, evergreen rainforests of Southeastern China, from where it spread all across the world including Japan. Some of the common names of loquat include Japanese plum, Japanese medlar, Maltese plum.

Health benefits of Loquat fruit:

• helps you lose weight/aids digestion
• keeps cholesterol at healthy levels
• promotes bone health
• great for the circulatory system
• helps diabetics
• support eyesight

 

You will need:
• Fresh loquats, 1 pound
• Vodka, 750 mL (the best one for this recipe is the rice vodka Haku. You can find it at supermarkets like Vons or Safeway)
• Sugar- 2 -3 Tbs (you can always add more if you’d like when spirit ready)
• Large jar with tight lid

 

Instruction:

Wash loquats

 

 

Make 4 incisions on each fruit (see image below)

 

 

Place loquats in jar
Fill jar with sugar and vodka (all loquats should be covered).

The best Vodka for this infusion- Japanese Haku rice Vodka (but regular can work too).

 

Let it sit in cool place, away from sunlight, for 8-14 days. Start to sample on day 8.  Spirit should be a fragrant but not bitter. If it turns out bitter- no worries. Just add some sake to relieve bitterness.

 

Drain and enjoy!

OSMANTHUS LIQUOR

 

Fragrant and sweet, it will burst in your mouth with luscious ripe apricot and pear notes.

All you need is:
-Vodka- 500 ml
-Sugar- 160 g
-Golden Osmanthus flowers- 35 g

Steep Osmanthus in 500ml of Vodka for 30 minutes.
Strain through fine tea infuser, cheesecloth, or coffee filter.
Add 160g of sugar.
Stir to dissolve. Do not heat.
Fill a glass with ice, add the Osmanthus liqueur and top with chilled soda.
